Memorial Day Rocket Pop Pizza Recipe
While some may recognize Memorial Day as the unofficial start to summer, complete with pool parties and the end of the school year, it’s important to remember the true significance of this day. Memorial Day traces its origins back to the American Civil War, when it was first known as Decoration Day. From 1861 to 1865, communities across the country would gather to decorate the graves of fallen soldiers with flowers and flags. Over time, Decoration Day evolved, and in 1971, President Lyndon B. Johnson and Congress passed an Act that officially designated Memorial Day as a federal holiday. Today, it is observed on the last Monday in May with parades, ceremonies, and programs that honor and remember those who sacrificed their lives for our country.

- 1 pint of blueberries
- Non-stick cooking spray
- Parchment paper
- Cutting board
- Medium-sized pizza pan
- Utensils: spoon and knife
- Glass bowl
- Oven pan
Instructions:
- Preheat your oven to 325°F while you prepare the crust.
- Tear a piece of parchment paper to fit your medium-sized pizza pan. Place it on the pan and spray a generous amount of non-stick cooking spray over the parchment paper.
- Press your sugar cookie dough evenly onto the pizza pan, using a rolling pin or your hands to create a flat surface. Cut a large rectangle out of the dough and discard the extra.
- Bake the crust for 11-15 minutes, or until it's slightly golden. Let the crust cool on the counter for 30 minutes while you prepare the toppings.
- Wash the strawberries and blueberries. Remove the stems from the strawberries and slice them evenly. Place the fruit in your glass bowl. Set aside 14 Rocket Pop gummies from Kosmik Brands.
- Heat the white frosting in the microwave in 10-second increments to soften it. Stir it until smooth, then evenly spread it over the cooled cookie crust, leaving a small border around the edge.
- Arrange the blueberries in the top left corner of the crust to create a small rectangle.
- Place strawberry slices in a straight line below the blueberries, slightly overlapping each slice to create your first stripe.
- Next, place a row of Rocket Pop gummies directly below the strawberries. Continue alternating rows of strawberries and Rocket Pop gummies until the entire crust is covered.
- Slice and serve your colorful and delicious Rocket Pop Fruit Pizza!
